Hominy-mais is gedroogde mais die behandeld is met akalische oplossing (loog) om de schil en kime te verwijderen. Dit is oude proces, nixtamalisatie om het gemakkelijker mais te malen en te koken. Het geeft de mais ook een heerlijke smaak (wat je proeft in tameles en zelfgemaakte tortilla's) en maakt beter verteerbaar en meer voedzaam. Het kan gekookt worden, of vermalen tot maismeel, of grof worden gemalen. Je kan als ontbijt pap (met boter en stroop of als hartig bijgerecht koken. Of de gekookte mais kan je in de keukenmachine malen tot zelfgemaakte masa die je kan gebruiken om tamales, arepa's, empanadas en pupusas te bereiden.

Hominy corn is dried corn that has been treated with alkaline solution (lye) to remove the husk and chime. This is an ancient process called nixtamalization to make the corn easier to grind and cook. It also gives the corn a wonderful flavor (which you tastes in tamales and homemade tortillas) and makes it more digestible and nutritious. It can be boiled, or ground into cornmeal, or coarsely ground. You can cook porridge (with butter and syrup or as a savory side dish) for breakfast. Or the boiled corn can be ground in the food processor into homemade masa that you can use to make tamales, arepas, empanadas and pupusas.
