This oden soup base is flavoured with mirin, soy sauce and Hidaka kelp from Hokkaido. It has a rich, savoury flavour and a clean mouthfeel.
To prepare your hotpot, add your ingredients to the soup base and simmer until cooked. You can buy kamaboko (Japanese fish cakes) in many Asian supermarkets. You can also add shrimp, tofu, or sliced vegetables.
