Tapioca is a mainly tasteless starchy ingredient, made from processed and dried cassava root (manioc root) and is used in cooking. It is processed in thin flakes, or more commonly in small hard white granules or "pearls", which have to be soaked before use.
Cassava flour (tapioca flour) is often used as a binder in food and is also used as a binder for drug tablets. Tapioca flour is gluten-free.
